Collect the eggs at least once a day and more often if you can.
Your hens will obligingly lay them in nesting-boxes where they are
fairly safe but the safest place of all is in the box on your customer's
shelf. If you are producing an appreciable number of eggs
for sale, you must contact your local Ministry of Agriculture and
Fisheries. Egg producers are numbered for identification and
checked on regularly. Your eggs must be washed and measured
and sold in batches of a similar size. All this is to protect the
consumer which is quite right.
It seems a shame, however, that this
standardisation has brought the sale of a box of eggs into the same
position as the sale of a package of detergent. If you have a market
for Farm Gate sales, you can get away from the branded image.
Then your customers can have a more personal purchase, you can
have a higher profit and everyone is happier.
